Watermelon Salad

A perfect crowd pleaser!

This was perfectly refreshing for a summer day in this Georgia heat! If you have a get together coming up, I highly recommend using this recipe. You don't have to use the balsamic vinegar, but if you're like me and enjoy a little tang, it's the key ingredient. I leave the amount of mint up to you because I know it can be a bit much for some people.


This would go great with pretty much any summer meal. BBQ, grilled chicken, burgers, you name it, this salad would be great with it. Have another side of corn on the cob, and you're golden. I hope you enjoy it as much as I did!


Watermelon Salad


Ingredients

  • 2-3 cups watermelon (cut in chunks)

  • 2oz crumbled feta cheese

  • 1/2 red onion (sliced)

  • Fresh mint leaves (to taste)

  • 2-3 tbsp balsamic vinegar

Directions

  1. Toss all ingredients and chill in the fridge until ready to serve
