Adult Egg Sandwich

Sometimes you have to simplify for success.

The boys wanted breakfast for dinner, which meant I made them protein pancakes. I decided to keep things simple for myself while sticking with the theme of breakfast for dinner. I have made it a habit to keep a loaf of fresh sourdough in the pantry for me and my husband. I enjoy cutting off a slice, toasting it and topping it with whatever I have fresh and ready to eat. This open faced sandwich is a simple adult twist on an already delicious classic. I hope you enjoy it!


Ingredients

  • 1 slice of sourdough bread

  • 1 egg

  • 1 tbsp olive oil

  • 3 slices of tomato

  • 1oz plain goat cheese

Directions


Step 1

Begin by toasting your slice of bread (preferably on a flat top or skillet). After you flip to toast the other side, smear the goat cheese on top to allow it to melt.


Step 2

As the cheese is melting on the toast, start to cook your egg to your liking (using the olive oil to prevent from sticking). Smooth out the cheese and top with tomato slices and egg.
